GRILLED ZUCCHINI AND POACHED EGGS #I’M FLIRTING WITH SUMMER TEMPS

The summer-like temperatures and high humidity have become commonplace for the last few days in my neck of the woods (So. Florida, USA). Although the calendar says winter, Mother Nature has a mind of her own. What can I say? I’ve to go with the flow.

Guys, I know that many of you are experiencing frigid temperatures and I wish I could give you just a snippet of what I have. However, to usher you a tad of summer, I’ve grilled a couple of zucchinis. Maybe, those grill marks will make you feel a little warm within.

After slicing my zucchinis, I brushed them with olive oil and sprinkled with a pinch of salt and black pepper. Then, I grilled them to perfection highlighting the beautiful marks. To go with my zucchini slices I paired them with poached eggs. They were cooked just right; soft and creamy to the palate.The dish was light, nutritious and very tasty. Basically, it reminded me of summer.

By the way guys, if you grill on the indoors, do remember to have proper ventilation. Otherwise, a hot fire man or woman  might come knocking at your door(well, unless you don’t mind).  By the way, can someone tell me where is springtime? This feels like summer.
