FIBER HAPPY

My digestive system is skipping with glee. I can’t wait to indulge in a few of these wholesome and nutritious treats. Once again, Mother Nature has bestowed some of her finest foods for my palate.

I know that I’ll gain loads of fibers, antioxidants, vitamins, minerals and other beneficial nutrients. I’m ecstatic!

FRUIT SALAD PLATE AND A MELON SHOT TO START MY DAY

Over the week-end, I took time out to celebrate the milestones in two of my friends’ lives. And with any celebration, we can’t help it, we often go a tad overboard. And, that’s what occurred over the week-end. I indulged in some amazing dishes that were appealing to my palate and I. Also, I had quite a few cocktails that sent me ‘over the moon’ and back. Note to self, “don’t mix my drinks!”. Oh, I was super happy.

Well guys, I’m back to “justmeandmypot”, where I try to keep a balance. And today, I’ve decided to bring some redemption to yours truly. As a result, I made a refreshing cocktail consisting of watermelon, ginger root and lemon. I’ve also created an assorted fruit salad to provide the beneficial fibers, vitamins, minerals, antioxidants and other nutrients that my dear body needs.

Guys, my colon and entire body will be singing a redemption song throughout the day.

IT WAS A WILD CATCH FOR ME! #CRUSTED WILD FLOUNDER WITH PUMPKIN/COCONUT SOUP

I treated my palate to a rich and colorful mix earlier. Within a few minutes I was able to pan-sear a piece of crusty flounder after seasoning with salt and black pepper to taste. After lightly spreading fish with a panko breadcrumbs, this was seared in a combination of olive and canola oil.

Had some chopped pumpkin pieces from the previous winter. They came in a handy for a rich and colorful soup.  They had been sitting in the freezer from last winter. Just didn’t have the urge to use same. It was quite convenient You see, all was needed was to defrost my bright pumpkin pieces. While I was at it, I grabbed some fresh coconut milk.

After sauteeing  finely chopped onions and a clove of garlic, I added pumpkin to the mix. A pinch of salt and pepper were added along with a sprinkle of dried thyme. Coconut milk was then added. In less than ten minutes, all ingredients were cooked. This was cooled and then pureed in standing blender.

My tasty and delicious soup was served with crusty wild flounder fish with a garnish of cilantro. Sautéed garlic kale and pieces of corn on the cob were added as sides.

Guys, I was elated with my dish.

LAST NIGHT’S SUPPER #TARRAGON-SPICED PORK STEAK AND ROASTED APPLES/CARROTS

Still have a supply of tarragon in my herb collection.  I’ve been infusing this nutrient packed herb in my dishes for quite a few days. This slender and somewhat sweet herb  was excellent in my chicken dish and once again, it has performed a great job on my pork steak. With the aid of a few other ingredients like ginger, onions, salt, pepper,garlic, etc. I was able to pull off an amazing tarragon-spiced dish stove top.

In the culinary world, pork and apples are ideal partners. Thus, I decided to combine both by roasting a couple of red delicious apples cut in slices along with carrot wedges. With a drizzle of olive oil a sprinkle of cinnamon, pinch of salt and chopped tarragon, apples and carrots were roasted at 410 degrees for about 40 minutes. The result was a sweet and tart finish.

Tarragon-spiced pork, roasted apples,and carrots were served with a side of kale/parsley rice. The union was superb.

A PROTEIN-RICH AND FIBER LOADED DISH TO LEAP ME FORWARD

Still trying to wrap my foggy head around the time change. Although it isn’t quite springtime, already the clocks have leapt forward. Ready or not, I’ve to adapt. So on this dark and overcast morn when me and my palate are a tad confused, I decided to make a wholesome and satisfying breakfast to start the day.

Grabbed me a couple of eggs and decided on a cheesy and onion filled omelet. In addition, I paired same with cantaloupe and a little chopped up apples warmed with a squeeze of honey. Thought I would just tossed in a few grapes and raspberries for extra fibers.

Guys, I enjoyed with a cup of java chased with a splash of cream. Oh, still can’t understand. I’m trying to get used to the time change. I’ve to change that clock in my head.

IT’S GOING TO BE A BATTLE OUT THERE…….FUEL UP!! #CHRISTMAS SHOPPING

Guys, before you hit the malls and other shopping venues, make sure you have a satisfying protein meal like eggs, or fish. Guys, it’s the Christmas season, you know the lines are going to be long. A parking spot is another challenge to overcome. And, if and when the hungry pangs come calling your patience also goes out the door, quicker than the fastest man on earth, Usain Bolt.

Those yuletide songs will drive you crazy if your stomach is also doing its own thing. Be prepared! Take along a few healthy snacks that will provide energy and endurance for you and your loved ones. Energy bars are great. Grab a ziplock baggie and pack a few nuts, dried fruits, apples, etc. They make a world of difference. You’ll be  ‘jingling belling’ all the way with smiles on your face.

OFFICIALLY, I’M A SICK ‘PUPPY’……I ATE OUT OF THE ‘BOX’!! RUFF!RUFF!

Guys, maybe its the dip in the temperatures; I don’t know. You see, South Florida, the sunshine state is  experiencing unseasonably winter-like temperatures (well, Florida-style). That means we’ve to grab hold of our boots, ear muffs, turtle necks, gloves…..the works. I’m telling you guys, my HEATER IS ON!!

For me, when the digits plummet, my palate sometimes becomes a little ‘out of whack’. It craves unusual eats. So, what do I do? I figured I should go with the flow. It didn’t feel like the typical dinner or supper menu dishes. You would think that, okay, it’s cold, maybe a big bowl of soup would do the trick. But no, it felt like having breakfast for dinner.

And so, I did! I crushed an over-ripened banana, shredded a McIntosh apple along with a pinch of fresh ginger. With a combination of all-purpose and whole-wheat flour, sugar, melted butter and spices, I had the perfect batter for apple/banana/ginger pancakes. I topped this with fresh raspberries I had on hand. Of course, I could not resist, a couple of pieces of crispy apple wood bacon had to be on the side.

Now guys, IT’S THE CHRISTMAS SEASON!! And in honor of the Christ child who would later turn water into wine, I decided to sip on a little red wine. But, what I did was to warm my wine, YES I DID! After all, it’s breakfast for dinner. On the side, I placed my cinnamon stick for dips, a great way to add extra flavor. HO! HO!!

SARDINE OMELET & PAN-ROASTED APPLES

Woke up and felt a wee bit out of it. It’s so amazing how one can rein-in balance just by doing a few simple things. And, that’s what I did. Despite the doldrums within, I fetched my workout pants and old sweaty shoes. I must remember to get me a new pair. Anyway, I ventured on the outskirts and burst a few beads of sweat. As usual, fifteen or so minutes within  I already felt a great shift as I stretched my legs.

I then returned to base (abode) and watched those precious ducks do their paddles in the water at the rear of my dwelling. After a few stretches and moves I went to my kitchenette and whipped up this amazing sardine omelet. With the sprinkle of a little salt and black pepper, and a squeeze of lemon my sardines were ready to be immersed the beautiful and silky egg wash in my hot skillet.

In a few minutes after layering my heart healthy fish from the tin, I carefully did my flip and fold of a tasty omelet. I served my sardine omelet with pan-roasted apple slices sprinkled with a pinch of sugar and cinnamon along with a pat of butter and a drizzle of water. I still have a few of those raspberries so I topped my apples with them.

Guys, the combination was quite divine and needless to say very satiating. With a hot cup of java, I’m now on top of the world. I’m over the moon and feel like I can conquer absolutely anything. It’s so funny how one can make a shift with simple steps.

A SCRAMBLED CHEESY/HERB EGG DISH TO START MY DAY

Tried to start my day right. I wasn’t in the 100% frame of mind, but, I did it anyway. It’s funny how after a few minutes one can shake the lackadaisical mood. Guys, I’m talking about getting physical on the outskirts.

It was quite a mild and beautiful morn. Thank God I surrendered and went for a much-needed speed walking session. It certainly worked up an appetite. Thus, I went back to my abode and made yours truly a scrambled cheesy/herb delight. My herb of choice was parsley. Seems like I always have that on hand.

I served my eggs on rye toast with a topping of fresh cranberry spread. By the way, when cranberries are in abundance, I make fresh cranberry spread. Also, I had a side serving of sliced apples and fresh raspberries.
