My stomach and I are still in a very happy, warm, and satisfying place. Thanks to my old-fashioned oatmeal and berries. I see an awesome day ahead.
Decided to take advantage of the peak of cantaloupe season (June/August) by making a salad. It was the perfect time to use the nifty gadget, melon baller on my cantaloupe. It turned out some super-sweet balls. They made my taste buds salivate with delight. Balanced out my sweet cantaloupe with some of my favorite berries, blueberries.
These fiber and antioxidant berries were just what my melon needed. With the tart and sweet taste, they gave a fine balance to my summer salad. With a squeeze of fresh lemon and an input of finely chopped mint, my cantaloupe, and berry salad came to a refreshing and mouth-watering finish.
Call me what you wish. When dark clouds cascade the skies and there’s a threat of rain, I think of food. So, despite the gloomy forecast for the day, I laced up my walking shoes and managed to break a sweat on my jogging trail.
As I dodged raindrops, I smiled. One major thing was on my mind. It was a healthy and wholesome stack of pancakes. When I got back to base, I fired up my skillet and made a free-flow batter with these ingredients:
- whole wheat flour/sprinkle of all-purpose flour
- baking soda
- old-fashioned oats
- leftover roasted pumpkin
- over ripened banana
- powdered ginger
- brown sugar
- melted butter
- olive oil
- a sprinkle of salt
- dollop of sour cream
- splash of vanilla
Topped my pancakes with some fresh blueberries in a circle. With the drizzle of a little light syrup, my golden cakes were ready to be devoured. They were like sunshine on my cloudy and precipitous day.
Needed something to quench summer’s thirst. Didn’t have to venture far. Thanks to the refreshing and super-sweet fruits of summer I was able to satisfy and temper the sizzling temperatures.
I was happy to turn to my little stash of surplus fruits in the freezer. Secured them at a relatively inexpensive rate when there was a glut on the market. Those wholesome fruits were just perfect for the picking.
Needed no added sugar as my fruits were loaded with enough natural one. Also added:
- lime juice
- ginger root
- over-ripened banana
Placed all ingredients in a standing blender with a splash of cold water and blended and pureed my summer fruits to a refreshing finish. This was placed in popsicle holders and set. Felt like a kid in a candy store as I beamed with excitement with my choices.
As the summer temperatures and humidity skyrocket on the outskirts, my palate takes a nose-dive with my food choices. I’m less likely to cook heavy meals. I crave the light and easy.
Moreover, I tend to increase the amount of fruits in my daily dietary plan. Thanks to my neighborhood farmer’s market, I’m able to access relatively inexpensive fruits that are locally grown.
These wholesome foods help to replenish what I lost via perspiration and otherwise during the sizzling days. Fruits are loaded with nutrients like fibers, vitamins, potassium and others which are beneficial to the body.
You could say, these fruits and I have a great kinship.
When the temperatures sizzle on the outskirts, I’ve to find ways to quench the thirst within. Didn’t have to look far for some of my faves. Reached for the low-calorie watermelon which is loaded with great amounts of vitamin C, and other beneficial nutrients.
It’s a ‘no-brainer’ for me. Love to stock up on the antioxidant foods, blueberries. These are said to promote brain health. During this time, the marketplaces are packed with these berries which make the prices relatively inexpensive. As a result, I try to freeze a portion and snack on the fiber goodness.
Went with the flow and was super-happy.
I couldn’t wait to sink my teeth in each of these pancakes. Breakfast never tasted so good.With a sweet/tart topping of simmered strawberries and blueberries, my taste buds were super-delighted.
Kicking off my morn in a heart-felt way. It’s nothing new. It’s one of my faves, whole-wheat grains (oatmeal) and fresh berries (blue and strawberries. Yippee!!
Great summer faves that hit the spot and simultaneously provide beneficial vitamins, minerals, fibers and other nutrients.
Look ye here! Look ye here! I’ve the main ingredients for banana and oatmeal pancakes over here! It’s nothing new; but for me, whenever I enjoy a dish, I’ve no qualms in a repeat performance.
To others, they may see a couple wilted bananas to be tossed. But, oh no! My taste buds and I are already salivating the sweetness and smooth taste of these potassium foods. I’ll mash them and sprinkle a generous amount of warm cinnamon to balance my glucose in my system.
I’ll add the sweet goodness to at the end after I assembly my wet ingredients of :
- beaten egg
- melted unsalted butter
- splash of vanilla
- couple tablespoons of honey
To my wet ingredients, I’ll add dry ingredients of:
- whole-wheat flour
- baking soda
- pinch of salt
- powdered ginger
- cinnamon (can’t have enough of this)
I’ll combine the wet and the dry ingredients and try not to overwork them. Then, I’ll gently fold in the mashed bananas sprinkled with the exotic cinnamon.
In a skillet, I’ll spray a little Pam and use a 1/4 measuring cup to input the batter. Then, I’ll top pancake with fresh blueberries and flip after bottom is set and cook.
When each pancake is all done and ready, I’ll ‘dig’ in to the succulent delights. I can’t wait to indulge. The roof of my palate will so excited to experience that pop of those tart and sweet blueberries. Oh, I’m salivating already; I can’t wait to indulge.
