A POTASSIUM STACK FOR EASTER MORN #BANANA PANCAKES

Easter Sunday morning found me in a perfect place. Started the day with fresh pineapple with blueberries.  Had a few over-ripened bananas and decided to make a stack of pancakes.

To the batter, I also incorporated:-

  • old-fashioned oats, whole-wheat flour,baking powder, olive oil, ground cinnamon and ginger, egg, and a pinch of salt.

All ingredients were combined and cooked in skillet until cooked. These were served with a drizzle of pancake syrup and topped with fresh grapes. I could not resist, I a few strips of crispy bacon on the side.

Delicious ripe banana pancakes were paired with freshly squeezed Florida (red) grapefruit juice.

HEART-HEALTHY MORN #OATMEAL AND BERRIES

I can never grow tired of  one of my morning’s staples, oatmeal and berries. On this cool morning, had a comforting bowl to warm my stomach and nourish my body. In a stockpot, a  combination of almond milk and water were added along with Quaker old-fashioned oats, a dash of vanilla, and a sprinkle of cinnamon.

Oatmeal was then sweetened with a little brown sugar. Topped my hearty bowl with a serving of fresh fiber-filled strawberries and blueberries. And as usual, I sprinkled added cinnamon for extra flavor and balance of the glucose level within.

My heart and I were happy.

 

BANANA PANCAKES/BLUEBERRIES #POTASSIUM/FIBER POWER

Got a bit creative with my breakfast this morning. If you have been following my food blog, you know that I don’t toss. As a result, this morning was no different. You see, a couple of my ripe bananas got mushy and speckled.

Came up with the perfect ‘save’. I transformed my potassium fruits to warm and delicious pancakes. Some of the other ingredients added were:

  • Oatmeal (1/4 cup)
  • Cinnamon(1 teaspoon)
  • Brown sugar (1 teaspoon)
  • Olive oil(1 tablespoon)
  • Ginger (powdered)(1/4 teaspoon)
  • Whole-wheat flour (1 tablespoon)
  • Baking soda (1/4 teaspoon)
  • Blueberries

    I was happy.

 

KALE AND BLUEBERRY SMOOTHIE

It was quite a refreshing treat to indulge in a kale/blueberry smoothie. With a handful of  greens(kale), blueberries,  ginger root,freshly squeeze orange juice and splash of water, I allowed my standing blender to do the work.

POTASSIUM/FIBER MINGLE WITH HEART-HEALTHY OATS

I can never grow tired of my old-fashioned oats. It’s one of my favorites to jump-start my day. I combined milk and water and a generous sprinkle of cinnamon and slowly brought oatmeal to a simmer under low heat.

After it reached a thick consistency, I sweetened with a little brown sugar. Topped off my oatmeal with some sweet/tart blueberries which are packed with amazing fibers and antioxidants they say. Also, I had to get those potassium-filled sliced bananas. They brought such balance to my satisfying dish. With a little added sprinkle of cinnamon on top, my heart-healthy dish was done.

I was super-happy and satiated.

EGGS AND HAM WITH GREENS

I tried to strike a balance with this morning’s meal. I opted to include a little sauteed kale for extra nutrients for the day. I couldn’t resist. So, I decided to include the last bits of ham from past Christmas in my scrambled eggs. That move made such a difference with each creamy fork bites of eggs.

It felt like Christmas all over again.  On the side, I had a perfect contrast with orange spread slathered on toasted rye bread. Fresh fruits in the form of blue berries and tangerines bites finished my morning’s meal. I was happy.

FIBER CHOICES #OATMEAL AND BERRIES

I can never grow tired of this healthy and filling breakfast.  Most days of the week, I try to indulge in a warm dish of whole grains in the form of oatmeal. I prefer the old-fashioned version because it has a little ‘bite’ to it.

Oatmeal is still relatively inexpensive and easy to cook. Moreover, I love that it’s a great source of fiber,  vitamins, minerals and other nutrients. And, based on the nutritional facts, its excellent for lowering the glucose and cholesterol levels in the body.

Earlier on this morning, it was no exception. I cooked up the hearty grains in some milk. I made sure to add a dash of vanilla and a generous sprinkle of cinnamon for added flavors. Under low heat, oatmeal came to desired consistency. Then, it was sweetened with a teaspoon of brown sugar.

Oatmeal was topped with the antioxidant and fiber foods of fresh and colorful strawberries and blueberries.

 

TRYING TO KICK OFF MY DAY RIGHT #BERRY AND BANANA SMOOTHIE

Trying my utmost best to do it right. After I kicked it up on the outskirts, I ventured to my humble kitchen and whipped up a refreshing morning cocktail. As usual, my handy and reliable standing blender was patiently waiting for your truly. I had a little work for it.

I grabbed me some frozen berries in the form of strawberries, raspberries and blueberries and added them to blender. I also input a half of a ripe banana which I also had in the freezer. Whenever my ripe bananas become a little mushy and over-ripened I chop same and store in freezer.

With a splash of water and a piece of watermelon, I  pulsed and pureed my morning cocktail to sweet and fiber-filled finish. I poured into margarita glass and topped with a few blueberries. Just I had expected, it was thick (not overly), smooth and full of natural sugars from all the fruits. I was super-happy.

FRUIT SALAD PLATE AND A MELON SHOT TO START MY DAY

Over the week-end, I took time out to celebrate the milestones in two of my friends’ lives. And with any celebration, we can’t help it, we often go a tad overboard. And, that’s what occurred over the week-end. I indulged in some amazing dishes that were appealing to my palate and I. Also, I had quite a few cocktails that sent me ‘over the moon’ and back. Note to self, “don’t mix my drinks!”. Oh, I was super happy.

Well guys, I’m back to “justmeandmypot”, where I try to keep a balance. And today, I’ve decided to bring some redemption to yours truly. As a result, I made a refreshing cocktail consisting of watermelon, ginger root and lemon. I’ve also created an assorted fruit salad to provide the beneficial fibers, vitamins, minerals, antioxidants and other nutrients that my dear body needs.

Guys, my colon and entire body will be singing a redemption song throughout the day.

MY HEART DID AN EXTRA SKIP THIS MORN ##APPLE OATMEAL WITH BLUEBERRIES/FLAX-SEEDS

I was still in a heart-healthy kind of mode this morning. They say “an apple a day keeps the doctor away”. I’m no scientist; however, I do know that incorporating fresh fruits in my daily diet aid me tremendously when it comes to digestion. So, to ‘bump’ up the taste of my morning’s oatmeal, and to give my dish more fiber I decided to add a shredded apple.

In a small stockpot 2%whole milk was poured. Oatmeal was then added with a generous sprinkle of cinnamon and a splash of vanilla. This was simmered on low heat until a thick consistency was had. Then shredded apple was added. This was folded into oatmeal and allowed to simmer for another couple of minutes.

Apple oatmeal was sweetened with a couple teaspoon of dark sugar. This was then served in dish with a topping of blueberries formed in a heart-shape. And in between my blueberry heart, flax-seeds were sprinkled for more heart healthy properties. My heart and I were happy.
