Once again, I partook of what Mother Nature bestowed upon me. I made sure to infuse the warm flavors of ginger root to my refreshing beetroot and cantaloupe juices. I can still taste that hint of ginger root on my tongue.
And because every day is a celebration, I decided to serve up same in champagne chutes. Bottoms up!!
I was totally elated to pucker-up my to my supper earlier on. Yes, I did a citrus chicken (dark portions) for supper. With the help of the juice of limes/lemons, my chicken parts were able to absorb the tangy flavors. Basted them with a citrus/honey sauce.
Roasted chicken along with carrots and sweet potatoes. Served up same with steamed garlic-flavored string beans. My taste buds and I were delighted to partake of the slightly sweet and tangy flavors of the poultry. And, the sweet potatoes, and carrots provided a fine balance to the entire meal.
Didn’t think twice to pair the two. It was a match made in culinary heaven. Needed to use my wholesome grains that Mother Nature gifted yours truly. Made enough farro salad the previous day. This included sautéed onions, zucchini, mini bell peppers and garlic.
My taste-buds were on high alert. I couldn’t wait to partake of my protein/fiber salad made from Italian pearled farro. Decided to pair same with a seafood treat and went with a favorite of mine, salmon steak. It was a tad thick, so, I made a slit and kept the skin on.
Seared my omega fatty acid dish in a drizzle of olive oil and set aside. Then finely chopped onions were added to skillet along with chopped olives. Because I know that seafood loves acid, a generous squeeze of lime and thinly chopped lime slices and a pat of butter were added.
Returned salmon to the skillet to absorb all the delicious flavors within and to spoon on the citrus/butter sauce. Topped salmon steak with extra chopped olives and lime and garnished same with finely chopped parsley I had on hand.
One thing I know is that I will be revisiting this Italian treat. And, that’s for sure.
For me, it’s a big bonus when I can use my a particular food item more than one way. And, that’s how it was with a couple of popular root vegetables. These bold and vibrant vegetables are loaded with nutrients such as beta carotene, vitamins, and more that are beneficial for the body.
Decided to make a refreshing and healthy drink. Added fresh ginger root and lime juice along with cold water. All ingredients were blended and strained for a naturally sweetened drink without added sugar.
I hate to waste. So, I then used the residual pulp to bake some delectable muffins.
With a couple of eggs, whole wheat/all-purpose flour, pinch of salt, baking powder/soda melted unsalted butter, brown sugar, cinnamon, powdered ginger a batter was done up. I made sure to toss in a few dried cranberries for added sweetness.
In no time my batter was ready for muffin cups.
Carrot and beet root muffins were baked at 320 fahrenheit for twenty minutes and an additional five minutes at 350 degrees fahrenheit.
Whenever I can, I try to incorporate wholesome ingredients and foods in my daily dietary plan. And, one way I like to do so is through the juicing of fresh fruits and vegetables. I can never get tired of combining beet root, ginger root and carrots. To give an extra punch I like to add fresh citrus juice in the form of lemons and limes.
For me, there’s no need to add sugar as these root vegetables are loaded with their natural sweetness. Moreover, they are packed with beneficial fibers, beta-carotene, vitamins, minerals and a host of other nutrients that are great for the body.
My digestive system will be super-happy for the entire week. It will be leaping with joy. Salud!
Once again, it’s that time of the year. Yes guy, it’s St. Patrick’s Day again. Although it wasn’t officially the day over the week-end, that didn’t stop enthusiasts to celebrate the luck of the Irish in the street parades. The bars and the eateries were loaded with all the Irish dishes and green drinks to attract customers.
So to acknowledge and celebrate St. Patrick’s Day, I’ve made a cucumber juice to set off the official day. It’s made up basically of fresh cucumber slices, the juice of limes along with cold water. All ingredients were placed in a standing blender and I had a healthy green drink for this day and anytime of year.
To make this drink even more amazing is to input a shot of vodka and serve same over cracked ice. Now, that would make one do the ‘River dance’. Salud!Happy St. Paddy’s Day!
