BARLEY/LEEK SOUP WITH PAN-SEARED SHRIMP

Kicked up my lunch to a satisfying and nutritious notch. Went with one of autumn’s popular vegetables, leeks. These sweet and subtle flavors were excellent to pair with barley.

Did it my way by adding other fresh/pantry ingredients like:

  • onions
  • carrot
  • celery
  • veggie bouillon cube
  • salt/black pepper
  • dried oregano
  • fresh thyme
  • veggie broth

After sauteing fresh veggies including leeks in a drizzle of olive oil, rinsed barley was added along with dried seasoning. Veggie broth and cold tap water were added along with a sprig of thyme.

Barley/leek soup simmered under low to medium heat until barley was tender. Then, this was pureed to a thick consistency. Barley/leek soup was topped with pan-seared shrimp with a garnish parsley.

Sunday’s supper will be oh so good. Looking forward to lovingly rip this beautiful slab (pork ribs) apart. I’ll  devour each morsel of slightly sweet, tart and mouth-watering flesh which was cooked to perfection. A fork-tender goodness comes to mind.

It has been some time since I’ve been down this culinary route. And, by golly, from a taste-test of this specimen, already my taste buds are leaping with joy. When it comes to food as this, I can’t help myself; it’s all fingers in. They will be sticky and that’s alright. Each bone will be handled just right. I’ll gnaw and suck each one until I’m satisfied.

Sunday’s supper is looking up alright.

SPICY SHRIMP/BELL PEPPERS

It was the beginning of something succulent. Went with a seafood dish that made my taste buds leaped with joy. Decided on a spicy shrimp meal. Layered same on a bed of pureed mini bell peppers consisting of:

  • assorted colors(mini bell peppers)
  • jalapeno
  • onions
  • garlic

In a skillet, veggies were sautéed in a drizzle of olive oil. Made sure to season with a pinch of salt, black pepper and a splash of red wine vinegar and water. Then, this was pureed in food processor.

Served up spicy shrimp and bell peppers with whole grain linguine pasta with a few broccoli spears, and a garnish of finely chopped Italian (flat-leaf) parsley.

IT’S A TACO FRIDAY! #TURKEY CHILI!

Still rocking my turkey chili. Used up my mouth-watering treat in a few crunchy taco shells. Topped with the spicy poultry with diced avocado, vine-ripe tomatoes, and cool sour cream. Garnished with chopped Italian parsley.

Once again, my palate and I  were transported to a happy place.

MIND-BLOWING JERK TURKEY BALLS

Not all balls are created equal. There are balls. And, there are BALLS!! Of course, I went the ones that screamed enormous flavors. After all, I’ve been here before. It’s amazing how a few added ingredients can tweak a bland poultry dish into an amazing one.

The main ‘player’ (ingredient) that made my turkey dish super-special was a small input of jerk seasoning  from the jar. Thanks to the ethnic aisle in my neighborhood store, I was able to be transported to Jamaica. A pinch goes a long way. That small move took my balls to another level. In addition, sautéed diced veggies and other ingredients  consisting of:

  • onion
  • carrot
  • celery
  • garlic
  • egg
  • panko bread crumbs
  • scallion
  • thyme
  • parsley
  • salt/black pepper
  • soy sauce
  • olive oil
  • brown sugar

were added in order to make these balls succulent and mouth-watering. Instead of frying my balls, I baked them for approximately 20 minutes at 375-degree fahrenheit. Then, they were placed a sweet and sour sauce consisting of a pinch of jerk sauce.

My balls were extremely happy and receptive. They absorbed all the sticky, sour, spicy and sweet ingredients.

 

 

 

GREEN EGGS WITHOUT THE HAM

I certainly didn’t miss the ham in my breakfast dish. And, thinking about it, Dr. Seuss would also approve. You see, I went with a couple of cage-free eggs and made a delightful and creamy scrabble with same.

In order to get the green contrast, I used up leftover kale/parsley pesto from a previous meal. After eggs were slowly cooked over low heat, kale/parsley pesto was folded in. In addition, a light sprinkle of cheddar cheese was added along with a pinch of salt and black pepper.

GRILLED SHRIMP/CHICKEN TENDERLOINS WITH FRILLS

When the temperatures are soaring on the outskirts, I’ve no time to be spending extended time on top of my stove. I often seek out quick, easy, and delicious meals. After all, I want to secure much-needed time to enjoy the summer.

Went with that in mind this afternoon and oh, look what I managed to turn out. Grabbed hold of my grill pan and made me a few grilled shrimp and chicken tenderloins. I needed to take them to another level.

So, I made a quick kale/parsley pesto and slathered some on my grilled chicken (lime flavored). Decided to reach for some of summer’s favorites in the form of mini bell peppers. Finely chopped up those assorted hues along with diced onions, a squeeze of honey, pinch of salt and a splash of vinegar and slowly simmered.

I couldn’t resist. If I’m indulging in shrimp, I’ve to have that ‘kick’. Thus, I added finely chopped scotch bonnet peppers to the mix. Oh, those dear shrimp were super-excited. With a squeeze of fresh lime, I layered  those juicy shrimp on a bed of Jasmine rice. And, of course, I added that spicy side dish of assorted mini bell peppers.

I was on cloud nine.

 

ROASTED SWEET POTATO/CHICKEN SALAD

So glad that I went with the culinary ride. Hopped outside the box and decided to take my yams to another level. Cubed, drizzled with olive oil and sprinkled those nutrient packed foods with cinnamon, a pinch  of salt, and powdered ginger.

Placed them on foiled baking sheet and baked at 400 degrees Fahrenheit for approximately 35 minutes until they were crispy on the exterior creamy on the interior.

After cooling, those sweet and crispy treats were added to left-over bite-sized rotisserie  chicken (breast portion), a handful of Italian parsley and a few broccoli spears. For dressing, I combined:

  • a dollop of sour cream
  • light mayonnaise
  • a sprinkle of salt and black pepper
  • a splash of red wine vinegar

All ingredients were combined and ‘married’ well.

My taste buds were ‘over the moon’ with the mix of in the sweet and savory. It was like a party inside my mouth.

WATERMELON SHOTS + BITES

Look ye here! Look ye here! I’m having one of my best time ever! Decided to go once more with  one of the healthiest foods around. Based on nutritional factS, this fruit is loaded with great sources of  vitamin C, vitamin B6, magnesium, potassium and others.

Got a tad creative with my choice of serving. What do you know? Dusted off my cookie cutter and went to work. After all, this nifty little gadget needed to be put to work. Haven’t been baking cookies.

Went the virtuous route with my melon shots. All I needed was chunks of watermelon, freshly squeezed lime juice and a splash of water. Blended all ingredients in standing blender.

Didn’t have fresh mint on hand and decided to work with what I had. Grabbed a bit of my Italian parsley and garnish my shots of morning beverage. Once more, I was transported to in a very happy place.

GRILLED PINEAPPLE/CHICKEN WITH PINEAPPLE/RUM SAUCE

My palate did leaps of joy as I partook of this succulent dish. Yes, guys, I brought the tropics to my kitchen. I couldn’t help myself. I had the right ingredients in the form of fresh pineapple and Jamaican white rum. I took the cue and went with it.

Baked a few drumsticks and thighs and basted with fresh pineapple sauce simmered along with a squeeze of honey and of course a splash of Jamaican white rum.  Oh, I was happy.

I couldn’t leave out my dessert. Added a grilled slice of the sweet and tropical fruit to a couple scoops of vanilla ice cream:
