Look ye here! Look ye here! I’m having one of my best time ever! Decided to go once more with one of the healthiest foods around. Based on nutritional factS, this fruit is loaded with great sources of vitamin C, vitamin B6, magnesium, potassium and others.
Got a tad creative with my choice of serving. What do you know? Dusted off my cookie cutter and went to work. After all, this nifty little gadget needed to be put to work. Haven’t been baking cookies.
Went the virtuous route with my melon shots. All I needed was chunks of watermelon, freshly squeezed lime juice and a splash of water. Blended all ingredients in standing blender.
Didn’t have fresh mint on hand and decided to work with what I had. Grabbed a bit of my Italian parsley and garnish my shots of morning beverage. Once more, I was transported to in a very happy place.
As the summer temperatures and humidity skyrocket on the outskirts, my palate takes a nose-dive with my food choices. I’m less likely to cook heavy meals. I crave the light and easy.
Moreover, I tend to increase the amount of fruits in my daily dietary plan. Thanks to my neighborhood farmer’s market, I’m able to access relatively inexpensive fruits that are locally grown.
These wholesome foods help to replenish what I lost via perspiration and otherwise during the sizzling days. Fruits are loaded with nutrients like fibers, vitamins, potassium and others which are beneficial to the body.
You could say, these fruits and I have a great kinship.
When the temperatures sizzle on the outskirts, I’ve to find ways to quench the thirst within. Didn’t have to look far for some of my faves. Reached for the low-calorie watermelon which is loaded with great amounts of vitamin C, and other beneficial nutrients.
It’s a ‘no-brainer’ for me. Love to stock up on the antioxidant foods, blueberries. These are said to promote brain health. During this time, the marketplaces are packed with these berries which make the prices relatively inexpensive. As a result, I try to freeze a portion and snack on the fiber goodness.
Trying my utmost best to do it right. After I kicked it up on the outskirts, I ventured to my humble kitchen and whipped up a refreshing morning cocktail. As usual, my handy and reliable standing blender was patiently waiting for your truly. I had a little work for it.
I grabbed me some frozen berries in the form of strawberries, raspberries and blueberries and added them to blender. I also input a half of a ripe banana which I also had in the freezer. Whenever my ripe bananas become a little mushy and over-ripened I chop same and store in freezer.
With a splash of water and a piece of watermelon, I pulsed and pureed my morning cocktail to sweet and fiber-filled finish. I poured into margarita glass and topped with a few blueberries. Just I had expected, it was thick (not overly), smooth and full of natural sugars from all the fruits. I was super-happy.
Over the week-end, I took time out to celebrate the milestones in two of my friends’ lives. And with any celebration, we can’t help it, we often go a tad overboard. And, that’s what occurred over the week-end. I indulged in some amazing dishes that were appealing to my palate and I. Also, I had quite a few cocktails that sent me ‘over the moon’ and back. Note to self, “don’t mix my drinks!”. Oh, I was super happy.
Well guys, I’m back to “justmeandmypot”, where I try to keep a balance. And today, I’ve decided to bring some redemption to yours truly. As a result, I made a refreshing cocktail consisting of watermelon, ginger root and lemon. I’ve also created an assorted fruit salad to provide the beneficial fibers, vitamins, minerals, antioxidants and other nutrients that my dear body needs.
Guys, my colon and entire body will be singing a redemption song throughout the day.
Guys, we first eat with our eyes. And, now that summer is here full throttle, what better way to quench that summer thirst than with refreshing watermelon. They are plenty on the market and are quite inexpensive. Nothing is wrong in playing with your food. Make it convenient and easy to pick up by cutting in shapes and placing them on skewers.
I did; and they made me coming back for more. You and your loved ones will do the same. One great way to make your skewers more refreshing is to squeeze a little fresh lemon or lime on same. Better yet, if you wish to be ‘frisky’ and ‘over the moon’, you could soak them in any of your favorite alcohol like vodka, rum or tequila and have your liquor on a stick. Now, don’t over do it. All you need is a hint. Cheers!

I love the taste of mango in a refreshing summer cocktail. It’s bold and upfront and center within a drink. And, it doesn’t take a huge amount to flavor a particular drink. A few pieces go a long way. The smooth and sweet characteristics make it perfect for an exotic drink on a sizzling day.
And so, this afternoon, my palate was in for a refreshing surprise of this amazing cocktail. I didn’t need to input any sweetener or sugar as my fruits provided the natural sugars. My blender was more than ready for a few wedges of watermelon, the juice of an orange, chopped ginger root, water and of course pieces of mango.
With a few pulses of my standing blender I was greeted with a virtuous drink of mango cocktail. As you can observe, the mango overpowered the other juicy and tasty fruits with its golden appearance. And the taste was just as bold. The warm, sweet and ripe aromas were evident in my space. Just as I expected; the drink acquired the thick consistency I was looking for.
I couldn’t help myself; I had these summer fruits and veggies peering at me. When I bought them, I had great plans and intentions for them. However, because of my crazy schedule, I had put off utilizing those wholesome products. Knowing that their shelf lives were quite short I took the plunge. I pulled my tired derriere from my favorite spot on my sofa and got to work. (N.B. My Facebook friend (Gloria) inspired me to embark on this juicing session. Thanks Gloria!).Yay!
It was the perfect timing. You see, today is officially the first day of summer. And like always, I love to take advantage of summer’s delights. I figured what better way to enjoy earth’s bountiful harvests then to express all the beneficial juices from them. Moreover, I could enjoy much-needed vitamins, minerals, fibers and antioxidants in my body.
So, like a skilled knife-person I chopped my way to goodness.
Before that, I made sure to rinse fruits and veggies thoroughly with cold water. Then, I did a quick rinse with a little hot water so as to remove any residual dirt or pesticide.
I made three concoctions. One was done with a combination of watermelon,cantaloupe, ginger root, and a mix of citrus. Another one drink was carrots, beetroot, ginger root and a citrus mix. Also, the next was cucumber, ginger root, and lime juice. A splash of simple syrup was added to each juice.
I blended each drink to perfection; and then placed them in containers. The carrot, ginger, and beetroot version was strained in order to remove the left-over pulp.
Guys, I was proud of yours truly. Of course, I couldn’t resist. I had to sample my work. I grabbed a straw and sipped a combination of the watermelon and carrot/beetroot. I was in heaven.
